Breakfast Burritos
Fed up of spending your day either cooking or washing pans and plates?
Looking for something filling, tasty, quick and a little bit different for breakfast this weekend?
Why not give these breakfast burritos a try; you only need 1 pan and around 10 minutes to feed the whole family. They are packed with protein, vegetables and carbs, so should keep you going until lunch time.
This recipe is for 2 people but you can double or treble it if you have more hugry mouths to feed.
Ingredients
2 large wraps
4 eggs, beaten
1 onion, chopped
4 mushrooms, chopped
2 tomatoes, chopped or 10 cherry tomatoes, whole
1 cup spinach or rocket
Optional: 50g chorizo, sausage or bacon, chopped into pieces
Method
If you are using chorizo, sausage or bacon in your recipe, cook this first in a large pan over a medium heat. Then, add the ingredients in step 2 to the same pan (minus the oil) and follow the remaining steps.
In a large pan, add a little oil and heat the onion, mushrooms and tomatoes until the onion softens and the mushrooms start to brown. Stir in the spinach and allow it to wilt.
Set the mixture aside and wipe the pan clean.
Heat a small amount of oil in the pan. Add the eggs and gently stir and fold until only a small amount of liquid remains. Add the mushroom mix to the eggs and fold so that it is evenly mixed. Put the mixture into a bowl.
Heat your wraps in the microwave for 15 seconds.
Let everyone dig in and fill and fold their own wraps.
